Risotto Recipe
Risotto, literally "little rice", is a traditional Italian dish made by cooking short grain rice in a large amount of broth, flavored with Parmesan cheese and other ingredients. The rice is slow-cooked in 3 to 4 times as much broth, which creates the soft, creamy characteristic of risotto. Making a good risotto takes a bit of time and patience, but the resulting dish is worth the effort. About Risotto
Risotto, literally "little rice", is a traditional Italian dish made by cooking short grain rice in a large amount of broth, flavored with Parmesan cheese and other ingredients. The rice is slow-cooked in 3 to 4 times as much broth, which creates the soft, creamy characteristic of risotto. Making a good risotto takes a bit of time and patience, but the resulting dish is worth the effort. Rice is first toasted in a fair amount of butter, then warm wine is added and cooked out. Hot broth is added next, a small amount at a time, and stirring all the while, allowing each addition of stock to be absorbed before adding the next bit to the pot. This process of stirring continuously while adding hot broth is the most laborious part of making risotto, but it is this step that allows the starch of each rice grain to be released into the cooking liquid and ultimately create the luxurious richness of the dish. Once all of the broth has been cooked into the rice, butter and Parmesan cheese are added, seasonings adjusted, and the risotto is served immediately.
While this is the traditional method of preparing risotto, variations on the classic dish are boundless and include utilizing different cooking alcohols, herbs and spices, vegetables, meats, and even fruits. By following the same basic cooking technique described above, one can experiment with ingredients at home and create a unique masterpiece risotto -- creamy, velvety, and comforting, a good risotto exemplifies the glory of a well-prepared simple dish.
